docs: Remove Kling v2.1 I2V Pro model page

Kling 2.1 I2V Pro has been superseded by Kling 2.6 on Public Endpoints, so this removes its model page and cleans up references to it.

• Deleted public-endpoints/models/kling-v2-1.mdx and removed it from the "Video models" navigation group in docs.json.
• Added a redirect from /public-endpoints/models/kling-v2-1 to /public-endpoints/overview, matching the existing pattern for removed model pages.
• Removed the Kling v2.1 I2V Pro row from the video models table in public-endpoints/reference.mdx.
• Pointed the "Kling" link in the public-endpoints/overview.mdx model table to the Kling v2.6 Motion Control page.
• Removed kwaivgi/kling-v2.1-i2v-pro from the AI SDK video models table and updated the model count from 15 to 14 in public-endpoints/ai-sdk.mdx.
• Kept the historical February 2026 release note mention of Kling v2.1 but removed its link to the deleted page.

Verification: docs.json parses as valid JSON, and no remaining links to kling-v2-1 exist outside the redirect.
