Opinionated performance defaults, removal of deprecated names and old-version shims, and API cleanup.

2.0 supports sentry-sdk>=2.70,<3 and does not wait for sentry-sdk 3.0. 3.x support comes back in a 2.x minor once 3.0 is GA (modern-python/lite-bootstrap#380).

Out of scope: a 10% default OTel sampler (ADR-0008 keeps always-on as the user's decision), BatchSpanProcessor tuning, OTLP compression, the HTTP semconv opt-in, the structlog fast path except as an opt-in (it bypasses Sentry's stdlib log capture), and dropping Python 3.11 (modern-python/lite-bootstrap#272, EOL 2027-10-31).
